Need a veggie for tomrrow night dinner party..help!!
Tomorrow night we are having a few people over for dinner from Dh's work....actually they are his employees. Uggh!! First off, I can't cook...I make easy cassaroles and stuff like that but that's about it. So dh will be doing steaks on the grill. I'll do a salad and garlic bread but we need a veggie to go with the steaks. Dh suggested twice baked potatoes! Yeah...right..I can't do that. I need something easy and good preferably something I can prepare before. Any ideas? Maybe something in a slow cooker?

When we have steaks or cook out on the grill I will cut up some squash, onions, and broccoli and sprinkle some seasoning on top with some butter and cook those on the grill (I put foil on the grill where the veggies are). Its quick, easy, and it tastes wonderful!

Here's what I always make with steak. It's easy and delicious.
Get as many red potatoes (or yukon gold) as you need and wash and cut them into wedges so they're all about the same size (2" or so is good)
Get a casserole dish and drizzle the bottom with olive oil and put the potatoes in.
Chop up an onion (diced or wedges) and sprinkle over the potatoes
Drizzle more olive oil over top
Drizzle a little balsalmic vinegar over the top (maybe a tablespoon worth)
Sprinkle with salt, pepper, garlic powder and dried dill (optional)
Cover with foil and shake the dish a little to distribute the oil and spices.
Cover and bake for an hour at 400 degrees.
Serve with sour cream.
These potatoes are so easy and yummy. You could even sprinkle them with bacon and cheese for the last 10 minutes if you want to be fancy.
You could also wrap some asparagus in foil and throw that on the grill next to the steaks for 8 minutes. Just drizzle them with some Italian dressing and you're good to go.

Whenever we grill and also need a veggie. We will often grill some corn.
I take off the silk but leave the husks on. I melt some butter with some nice spices and brush that on the corn. Put the husks back up around the corn and then I tie some cooking string around each to keep the husks in place and grill them
This time of year asparagus is awesome. I brush them with a mixture of olive oil, balsamic vinegar, garlic, kosher salt and pepper. Skewer them so you have 5 or so skewed horizontally 3 times. Grill, Yummy.
We will also skewer numerous veggies: mushrooms, zucchini, tomatoes, onion, etc.. then will brush a similar mixture as above on it and grill. Then when done I just take them off the skewers and put them in a big bowl together and serve.
We have also grilled peach halves and served with vanilla ice cream for dessert, but since peaches aren't in season I wouldn't do it this time of year.

When we grill I slice up potatoes and onions and mix them with some vegetable oil and throw a bunch of spices over top. They're always yummy, and super easy!

You could grill or roast asparagus too - so easy! For the grill, just put a skewer through the bottom ends of the asparagus, so that they're all on a row on the same skewer - like a fence almost - and then brush them with olive oil and kosher or sea salt and grill for about 3-5 minutes. You can then squirt a little lemon over the top, and voila! The skewer just helps keep them together - you can also just put them on a piece of foil.
If you're going to roast them, just lay them out on a baking sheet, again a little olive oil and salt, and let them go for about 5-8 minutes or just tender.
So easy, fast, and delicious!

What about corn on the cob and baked beans. I do my baked beans in the slow cooker with a little ketchup, mustard, honey, onion, and brown sugar added. Yummy!

I also love grilled asparagus or a bunch of veggies (red orange and green peppers, mushrooms, zucchini, red onion, tomatoe) on skewers with either oil and vinegar brushed on, or a southwest marinade that I buy. both taste great!
